Stuffed capsicum.

These are such a quick, easy and nutritious dinner!

I personally have the capsicum raw so it’s nice and crunchy but you can also pop these in the oven until soft, whatever you prefer. For a vegan option you can substitute the tuna for some cooked tofu.

 

What you’ll need:

  • 3 capsicums.

  • 1 bag of falafels.

  • 2 cups of rice.

  • 2 cans of tuna.

  • 1/2 cup of corn.

 

How to make:

  • Cook rice.

  • Wash, gut and cut capsicums in half - put aside.

  • Mash all the falafels in a bowl until completely broken up.

  • Once the rice is cooked add all ingredients together and mix.

  • Spoon stuffing mix into the capsicum cups and serve.

  • Enjoy!

  • Feta

  • Sauerkraut
